As a 36-year-old moving with his wife to Tasmania from London six years ago, Simon Dray needed a career change. Having spent 24 years in luxury hotels and spas, he decided teaching was for him and enrolled at Tas Uni to specialise in Food Technology and Outdoor Education. Now working at Scotch Oakburn College in Launceston the enterprising ex-pat Englishman hasn’t looked back!
